Moth Usal (sprouted bean fry)

Moth beans are rich in iron and molybdenum and these taste yummy!


- 2 cups sprouted moth
- 1 small onion chopped
- Mustard seeds
- Oil 3 tablespoon
- Salt
- 2 Green chilies finely chopped
- Lime juice
- Turmeric Powder
- Garam Masala

1. To sprout moth beans, soak them in water for 8 hours and then tir in towel and keep for 1 day in warmer corner of house
2. Heat oil, add mustard deeds, let crack
3. Add chili and onion and cook for few minutes
4. Add turmeric powder, garam masala and stir well
5. Add sprouted moth beans and stir well
6. Season with salt and add lime juice
7. Cover and cook on medium heat for 20 minutes or till moth beans are cooked
8. Garnish with chopped coriander leaves
9. Serve with Roti


** You can make this recipe with moong sprouts as well

** If you want to enjoy moth beans instantly pressure cook 1 cup beans with 1 and half cups water and salt for 25 minutes (4 whistles)
