Leftover White Rice
Possibilities are numerous when it comes to leftover white rice. Here are few ways i use up white rice from previous day.
1. You can make curd rice
2. Heat oil, add cumin seeds and turmeric powder
- toss in vegetables you find in your refrigerator like carrots, peas, cauliflower, beans etc
- cover and cook till vegetable are tender
- add Rice, stir well
- season with salt
- cover and cook till rice become moist
3. Puliyodarai rice
- stock readymade puliyodaria paste/powder from any Indian grocery store in your pantry
- Use leftover rice to make puliyodarai rice as per pack instructions

Leftover Vegetable or Dal
You can make thalpeet using any leftover dal or vegetable.
- Any leftover dal or vegetable
- Jowar flour (sorghum flour)
- salt
- fienly chopped onion if the vegetable doesn't have it
- Coriander leaves chopped
- Oil
- Flat pan/ tava
- Red chili powder
- Ajwain (bishop's weed)
1. Mash the vegetable and kneed soft dough by adding flour and and other ingredients
2. Divide the dough in small portions
3. Spread some oil in a flat pan/ tava and spread out small dough portions using palm
4. Cover and steam cook from both sides
- Any leftover dal or vegetable

Roti Chura

This is a very tasty recipe, must try! An another way to use up left over roti/ paratha is crumble it add ghee and sugar to that and make small laddoo, but prefer chura.
- Stale roti/paratha crumbled
- Onion finely chopped
- Curry leaves 4-6
- Green chili chopped
- Turmeric powder
- Mustard seeds
- Salt
- Fresh lime juice
- Oil
- Sugar
- Coriander leaves chopped
1. Heat oil, add mustard seeds and let crack
2. Add curry leaves, green chilies and onion
3. Cook for few minutes
4. Add turmeric powder and crumbled roti/paratha
5. Add salt and little sugar and lime juice
6. Stir well and cover, cook for few minutes
7. Garnish with chopped coriander and serve hot
