Cauliflower Pulav



This spicy rice and can be served with any raita or dal. It brings out flavors of different spices used in this recipe.

Nutrition Value of Cauliflower

- 2 cups cauliflower florets
- 1 cup basmati Rice (long grain rice)
- Green onion chopped ½ cup
- Cumin seeds ½ teaspoon
- Bay leaves 2
- Cloves 5-6
- Freshly grounded black pepper
- Raisins
- Cashew nuts
- 2 tablespoon oil
- Dried whole red chilies 2-3
- Salt
- Cardamom pods 2-3
- Garam Masala

1. Heat oil, add cashew nuts and let fry
2. Add cumin, black pepper, bay leaves and cloves, suate
3. Add raisins, cardamom and cook for a minute
4. Add green onion and cauliflower and salt and cook for 2-3 minutes
5. Add washed long grain rice and cook for few minutes
6. Add 1 and ½ cup hot water, bring to boil
7. Cover and cook for 15 minutes on low heat
8. Turn off the heat, give a stir and keep covered for 10 minutes

** If you want, you can add turmeric powder at step 2 for yellow colored cauliflower rice, I prefer without turmeric.
