Eggplant Rice


Nutrtion value of Eggplant

- 2 cups long grain rice
- 2 cups diced eggplant
- 1 small onion sliced
- Cumin seeds
- Ginger, garlic paste 1 tablespoon
- Red chili powder
- Garam Masala
- Salt
- Oil
- Turmeric powder
- Fresh lime juice
- Chopped Coriander Leaves

1. Cook 2 cups rice and keep aside to cool
2. Heat oil, add cumin and ginger-garlic paste
3. Add turmeric powder, red chili powder
4. Add onion and cook for a minute
5. Add eggplant, garam masala and salt to season
6. Cover and let eggplant cook
7. Add rice and stir well
8. Add lime juice and garnish with chopped coriander
