Chole (spicy garbanzo beans)


This is a recipe form North Indian Cuisine, served usually with bhatura (fried wheat tortilla). This recipe can be used in chaats to spice up aloo tikki and samosa.
It is usually a thick gravy but can be made liquid if you are serving with rice. It tastes good when topped with finely chopped red onion which is seasoned with salt and lime juice. Garbanzo beans are good source of cholesterol-lowering fiber.
You can soak the beans night before and then pressure cook them or to make the recipe instanly you could use canned garbanzo beans. they taste almost same.

Nutrition value of Grabanzo beans

- 2 cups cooked garbanzo beans
- 1 Red onion paste
- 4 tablespoon tomato paste or 2 fresh tomato diced
- 2
Tej patta ( Bay leaf)
- Salt
- Turmeric powder
- Cumin seed grounded

Dhana (Coriander Seed) grounded
-
Garam masala 1 tablespoon
- Red chili powder

1. Use canned beans or soak in plenty of water overnight and then pressure cook garbanzo beans with 5-6 cups water and salt for 20-25 minutes (4 whistles)
2. Heat oil add bay leaf, turmeric powder, red chili powder
3. Add onion paste and cook for 7-8 minutes on medium heat
4. Add grounded cumin and coriander seeds
5. Add salt, tomato paste and cook for few minutes add little water from cooked garbanzo beans ,
If adding fresh tomato then cook till tomato is cooked
6. Add cooked garbanzo beans not the water in which cooked
7. Add garam masala, cook for 2-3 minutes
8. Add 1 cup water in which beans are cooked ( add more if you need more liquid)
9. Season for salt
10. Cook for 5-10 minutes
11. Garnish with coriander
12. Serve with puri/ bhatura/ rice
