Stuffed Eggplant


Nutrition value of Eggplant

- Small eggplant 6-7
- Grounded Peanut ½ cup
- Onion finely chopped ½ cup
- Red chili powder
- Salt
- Garam Masala 1 tablespoon
- Coriander leaves chopped
- Oil 2-3 tablespoon
- Turmeric powder

1. Make two slits halfway in each eggplant (to fill stuffing)
2. Filling : Mix onion, peanut, coriander, salt, garam masala, red chili,
3. Put spoonful of filling in each eggplant
4. Heat oil add turmeric and little salt add stuffed eggplants and cook on medium heat
5. Add excess filling to cooking eggplants when eggplant are half way through cooking
6. Cover and cook till eggplants are fully cooked
6. Garnish with coriander and serve with roti
